Preparation steps

Initial step

Allow the broccoli to thaw (if you are using fresh broccoli, cook it al dente first).

Place in a sieve, press gently and allow excess water to drain.

Chop the broccoli into small pieces.

Remove the skin from the shallot and chop finely.

Step 2

Mix the eggs, onion, broccoli, paprika, nutmeg, salt and pepper well in a bowl.

Heat some olive oil in the pan and fry the broccoli fritters on the pan.
